a big week at college this week. so many things in development. and end of semester. went to the markets on the way home to buy some fish to cook for guests on sunday, and of course there were cheap prawns as well.
so i made prawn and ginger fritters from the wonderful spirit house cookbook. spirit house is an award-winning thai restsurant at yandina north of brisbane. i've never been there but queenslanders rave about it. it's the first time i've used the cookbook, which seems fantastic.
mix 2 1/2 cups breadcrumbs with 1/2 cup coconut milk
combine 500 gms prawn meat, 2 tbps chopped ginger, 1/2 cup coriander leaves, 1 egg and 1 tbsp fish sauce - pulse them a food processor (ie. chop gently), add breadcrumb mixture and pulse again to mix, but only enough to combine.
deep fry in oil and serve with chilli sauce. we had this with jasmine rice, and sweet potato mashed with coconut milk, some ginger and some thinly sliced shallots. very yummy.
