I made this a couple of nights ago and its a winner. Dead-easy. From the Moosewood Restaurant Book of Desserts. We usually have a box of frozen mixed berries in the freezer (that's why they're frozen...) and I found a can of cherries in the cupboard.
Cover the bottom of a pie pan or baking dish with the berries. Pile them as deep as you like. There's no need to oil the pan. (The recipe uses 2 x 12 oz packages frozen cherries or 4 - 5 cups fresh.)
Top with the following combined in a food processor:
- 1/2 cups chopped almonds (I used almond meal)
- 1/2 cpu white flour
- 1/2 cup packed brown sugar
- 1/4 cup butter
- 1/2 tsp almond extract
Spread on top of the berries. Because I'd used almond meal spread toasted flaked almonds on the berries first. I could have put them on top but I was worried they might burn.
Baked at 180 degrees C for 35-35 minutes.
Add topping of choice.... Very nice indeed.
