a take on a Middle Eastern wedding dish. the inside has rice, minced lamb, grated carrot, orange peel and juice, chilli, dates, onion, almonds, garlic, parsley, and spices. i used my first-ever home made lamb stock. and pomegranate seeds on top of course, with a bit of parsley. the insides were based on this carrot pilaf. a bisteeya is usually a chicken or squab dish. i'm thinking of a turkey version for Christmas day...
