we had a family birthday dinner last night. I did the usual "what's going cheap at the supermarket" platter for starters - cheese, olives, pate, sundried tomatoes,etc.
entree is above. local SA prawns sauted in olive oil, garlic, lime juice, fresh coriander and cracked black pepper. crabs were already cooked, so we pre-cracked the shells and served them cold. the jasmine rice was cooked in coconut milk & chicken stock, kaffir lime leaves, lime juice, lemon grass essence & fresh coriander. we normally just chuck things on the plate so this was a special effort!
main meal was cajun chicken breasts (I used a decent packet spice mix to marinate it, and added preserved lemon & coriander leaves & black pepper when it was cooking) and baked moroccan vegetables (chopped veg - capsicum, sweet potato, red onions, zucchini, eggplant, tomatoes - with whole garlic cloves, sliced ginger root, mixed with olive oil & fresh rosemary & drizzled with honey).
dessert was home-made blueberry ice-cream using a real vanilla bean... (yes, we have an ice-cream machine. I think I'd give back the TV before this!)
followed by chocolates that were given as a present but of course must be shared!
and some nice wine too....
not bad at all.....
