harissa is a north african spice paste used in moroccan and other cooking. there are lots of different recipes apparently.
mine is pretty basic from the hamlyn spice book by arabella boxer.
50g chilli peppers (I just use minced out of a bottle()
25 g chopped garlic
5 g sea salt
25 g caraway seeds
1 1/2 tbspns olive oil
whizz it all up in the food processor and bottle it.
AND then you can use it to make moroccan pizza!
the other night I caramelized some onion in red wine vinegar - saute the onion gently in olive oil, then add a few tbspns of red wine or balsamic vingar and a few tbspns of sugar and stir on medium heat until it gets really syrupy.
then cooked chopped chicken thighs in some harissa, moroccan spice mix (I admit I used a bottled mix this time), chopped coriander leaves, lime juice and black pepper.
toast some pine nuts, put some dates in hot water to soak and then chop them.
brush the pizza dough with some olive oil. smear the onions evenly across the base. add the cooked chicken. top with dates and pine nuts.
i then drizzled honey on this but it was a bit of flavour overkill. I might try some pomegranate molasses next time (a dufferent flavour overkill). add some fresh coriander and serve with dollops of yoghurt or sour cream.
