well, the title pretty much says it all. inspired by theo and the paul gayler salad from boxing day.
tip from theo - 90 gms grated mozarella per pizza. ie. cut down on the cheese. i don''t buy the grated stuff any morte - its awful. i buy a mozarella ball thing.
cut a leek into 4-5 lengths and halve them longways. brush with olive oil and char them under a grill. (I keep brushing, and separate out some of the layers as they cook.)
cut a red onion into wedges, brush with oil and also blacken it under the grill.
halve about 20 cherry tomatoes, sprinkle with sea salt, black pepper, olive oil and fresh basil, and bake covered in a moderate oven for 10-15 mins until softened but not squishy. (these are great on lots of pizzas.)
spread basil pesto over the base of the pizza
add 90 grams grated mozarella
spread leek pieces on top, then add cherry tomatoes and red onion.
add kalamata olives and your cheese of choice, but something with tang - goats cheese, feta, good parmesan.
that's it! add other stuff if you want to. dabs of caramelised balsamic vinegar onions work too. you could add some bits of smoky bacon, but you wouldnt need much.
