tonight we're having osso buco, mashed spuds, mushrooms, and this really nice recipe from Greg & Lucy Malouf's 'Arabesque'. I've modified it slightly.
4 small lebanese eggplant - slice longways and salt for 30 mins
4 small zucchini - likewise
Fry eggplant and zucchiniin oil until lightly coloured. put into a dish.
Mix the following and boil for 1 minute - 8 tspn sherry vinegar, 4 tspn honey, 8 tspn water.
Pour over the veg. add 1 tbsp chopped fresh parsley and 1 tbspn oregano, 2 cloves garlic sliced thinly and zest of 1 lemon. (the recipe said 1/2 tsp sumac but I couldnt find mine...). And some cracked black pepper for good measure.
It's supposed to marinate overnight and then get warmed in the oven before serving. we're just going to eat it when the osso buco is ready. marinade is yummy and i expect it to be delicious.
