I was given Jamie Oliver's "!5 Minute Meals" for Christmas. Here's my rejig of one of his dishes.
A platter of sliced chorizo, smoked bacon and pork loin baked in BBQ sauce.
Corn chips baked with sauted cherry tomato halves, cheddar cheese, spring onions, red chillies and coriander leaves.
Salad of rocket and spinach leaves, roasted red capsicum, baked corn, cannelini beans, grilled avocado and pineapple, and lime.
The green dressing is spring onions, coriander, lime juice, sour cream and oil.
It took me forever to make but was an excellent combination and looked great, if I do say so myself. We'll be doing this again.
