Tonight I marinated a chicken in olive oil, garlic, smoked paprika, lime zest, lime juice, chopped coriander roots, diced chilli, sea salt and cracked black pepper. BBQed on the Weber with some hickory wood to smoke it. Fantastic! Served with a Mexican style salad of watercress, rocket, charred capsicum, leek, chocolate-cherry tomatoes, coriander, avocado, lime wedges and thin corn cob slices'. It worked for me!
