My mum has been visiting for a couple of days. She's just caught the train to Perth and flies back here in a week's time to visit for a few more days. So I thought I'd do something fancy for dinner.
Chicken marinated in lime and lemon juice, garlic, coriander and olive oil, then some strips of chilli and spring onion put on before baking.I was going to cook them over charcoal but some dummy (me) had the vents closed so when I put the lid on the coals went out! We'll have to BBQ something next week when she's back.
A couple of salads that were similar to some I'd done previously - see here. I think these are now signature dishes... Plus couscous which had pomegranate seeds and toasted slivered almonds through it.
