Several times I've bought ricotta on sale and then had no idea what to do with it. This week I've discovered exactly what to do with it! First up I used a Philip Johnson recipe from "Classic Ecco" to make Spinach and Ricotta Hotcakes with Smoked Salmon, accompanied by cauliflower mash, capers and dill. They look a bit burnt here but they tasted great. I tried to smear the mash on the plate to make it look arty but it just looked globby. Then last night I made Ricotta Pancakes and seved them with blueberries and ice cream. Fabulous. (Note: subsequent pancakes were round!)

Ricotta mixed with spinach, put into small canneloni tubes. Cover with a tomato sauce and sprinkle with parmesian. Bake until pasta is cooked. Yum.
