This is a neat trick. Two wonton wrappers inserted into a greased muffin tray, with the top one rotated 90 degrees. Fill with the filling of your choice - in this case chopped thai-spiced chicken, crushed ginger and garlic, chopped tomato, coriander leaves, spring onion, a couple of eggs and some sour cream (might try coconut cream next time), cracked pepper. Whisk together. Baked at 180C for 15 mins or until set. Great for lunches or after school snacks.
