Mexistrone soup is like Minestrone with a Mexican twist. It's not always the same twist. I was going to take the soup in a curry direction and then changed my mind. As well as multiple veg (onion, celery, carrot, zucchini, corn, tomatoes, beans) it has local Kanmantoo smoked bacon and garlic mettwurst.
Plus 1 tsp ground cumin, 1 tsp ground coriander, 1 tsp ground turmeric, 1 tsp smoked spanish paprika, 2 tsp chipotle adobo, about 2/3 tsp freshly ground cloves, handful of chopped basil leaves, handful of chopped coriander leaves.
I decided to serve it in one big bowl in the middle of the table and let people help themselves, kind of like a dip at a party.
Once the soup was in the bowl, I added a bit of lime juice, lime wedges, grated cheese, mixed sour cream & avocado, crispy fried chorizo "chips", coriander leaves and corn chips. I think it worked. It tasted great!
