Tonight I'm making a slight variation on this tasty soup from "1001 Low-Fat Soups & Stews."
1 skinless chicken breast. diced
1 large onion, chopped
1/2 tsp caraway seeds
1 tsp canola oil
Saute the above on medium heat for 5 mins. Then add the following and saute one minute longer.
2 large garlic cloves, minced
1 1/2 tbsp curry powder
2 tsp ground coriander
1/2 tsp ground cardamom
(The variation was that I didn't have any curry powder, so I added cumin, chilli powder, paprika, garam masala).
Add 7.5 cups chicken stock (I used less) and 3 cups peeled and diced potatoes. Heat to boiling and then simmer for 10-15 mins.
Add 300g frozed chaopped spinach, thawed and 1 cup canned diced tomatoes with liquid. simmer for 5 mins.
Season with salt and pepper.
